
A fun new way to enjoy the tasty flavor of zucchini bread.
1 cuo canola oil 
1 cup sugar 
1 cup brown sugar 
2 eggs, well beaten 
1 tsp. vanilla 
1 tsp. baking soda 
1 ¼ tsp. cinnamon 
¼ tsp. nutmeg 
3 ½ cup flour 
1 cup unpeeled and shredded zucchini 
1 cup chopped walnuts 
Preheat oven to 350 degrees. 
Mix the oil and sugar well. Add the eggs and vanilla, beating well. 
Mix the rest of the dry ingredients separately – baking soda, cinnamon, nutmeg and flour. 
Add to the wet ingredients, mixing well. Add nuts, mix. 
Drop by spoonfuls on a cookie sheet. Bake for 12 to 13 minutes. 
Remove from cookie sheet and cool on cooling rack.
